We clean at a pressure matched to the material, because natural stone and older concrete paving scar easily under an aggressive lance, and a pitted surface holds dirt worse than before. Joints are raked and re-pointed where the cleaning takes the pointing with it. Sealing is optional: genuinely worthwhile on porous natural stone, close to pointless on dense porcelain.
